I wonder has there been a surge in traffic or some server/network issues lately ?
Fajitas for dinner.
I didnt have any cajun spice handy so i use some Moroccan spice and paprika instead.
The guacamole, sour cream, salsa work great with the spicy chicken….
Another shot from the spinach and ricotta pasta bake. Looking forward to eating the leftovers tomorrow (after my marathon training :-) )
Pic from the Spinach and Ricotta Stuffed Pasta Shells recipe - Turned out nicely. The tomato sauce works well with the pasta filling. I didnt have any onions to put in the tomato sauce but i actually didnt need them.
The recipe just calls for garlic, a bt of red wine, tomatoes and seasoning. I let it reduce for about 20 minutes and ended up with a great rich thick sauce.
Give the recipe a try if you get a chance !!
